Seth Ellis Chocolates - Artisan Chocolate from Colorado
We came across Seth Ellis' Chocolates at Foodzie (a great place to find artisan food by the way). Seth Ellis is a small artisan chocolate manufacturer in Boulder, Colorado who creates gorgeous, interesting chocolates from organic and natural ingredients.
The pictures below are the Ginger Truffle and the Nutmeg Caramel Snobinette, respectively. Beautiful chocolates, and fun flavor combinations.

Thanks for the nice post about Seth Ellis Chocolatier and Foodzie. Seth Ellis makes incredible chocolates. We're lucky because we've been fed lots of them. :)
They are obsessive (in a good way!) about finding the best organic ingredients for their chocolates. You should hear about the efforts that went in to finding the organic mint for their mint truffle so that it would taste like a chocolate covered mint leaf.
